做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春(chūn )笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。 -
